This delicious smoothie tastes tropical and creamy, with the fresh fruitiness of strawberries, and subtle sweetness provided by dates. Additionally, after looking up nutritional info for the ingredients, I discovered that this smoothie is superfood in a glass – see nutrition info about strawberries, dates and coconut water.
It was inspired by a smoothie we had recently at a local juicing bar – they told us they were streamlining their menu, and taking this smoothie off. We didn’t want to go without, so this is my version…(I also think it would be excellent with mango or cherries replacing the strawberries):
Coconut Cloud Smoothie
Serves 2
6 strawberries, hulled (about 1 cup)
2 tablespoons coconut manna
1 150g (5.3oz) container coconut yogurt (or 150ml/2/3 cup any yogurt)
2 pitted medjool dates
3/4 cup (175ml) coconut water
1 cup ice cubes
Blend all ingredients except the ice on high speed until smooth, then add the ice and blend again. Divide between two large glasses.
*Made with strawberries, this smoothie is low oxalate, at approximately 4.89mg per serving (if divided into 2 servings). Sweet cherries have a similar oxalate content to strawberries, and mango is slightly lower.
