1cupsmall broccoli florets (about half a head of broccoli)
1cupsmall cauliflower florets (about half a head of cauliflower)
approximately 2 handfuls of arugula
2radishes, sliced
2red cabbage leaves, sliced into slender shreds
For the Dressing:
juice of one lemon, or half, if the lemon is large
1small garlic clove
1tablespoontahini (sesame paste)
1tablespoonolive oil
¼teaspoonsea salt
Instructions
Make the dressing first; place all ingredients in the container of a hand-held blender and blend until completely liquified, or place ingredients in a measuring cup (finely grate the garlic) and whisk well to combine. Set aside and make the salad.
Place a handful of the arugula in each bowl, then top with the broccoli and cauliflower florets, the radish slices and cabbage shreds and then pour the dressing over the top.
