Fast and Easy Chicken Noodle Soup {veg version too}

Fast and Easy Chicken Noodle SoupThis comforting soup is like the grown-up, less processed version of “Lipton Cup-a-Soup”.  I add carrot and potato to increase the nutrients and make the soup more of a meal, without altering the nostalgic flavour too much.

You can use chicken or vegetable broth if you already have it, but the ready-made broth paste or cubes will give it more of the authentic Lipton flavour.  I really like the “Better than Bouillon” brand of bouillon pastes, it’s so easy to stir in and tastes like what it’s supposed to, rather than just onion, like so many of them seem to.  I’ve found it at Whole Foods in both Canada and the U.S. and also other natural food stores, so it seems to be quite easy to find.

Chicken Noodle Soup (serves 2)
Ingredients:

1 large (or 2 small) carrots
1 large (or 2 small) potatoes
1/2 teaspoon dried parsley
1/2 teaspoon salt (or to taste)
1 bouillon cube or 1 heaping tablespoon broth paste (chicken or veg), or more to taste
3 cups filtered water
1/2″ bunch of spaghetti noodles, or more if you like lots of noodles, broken into pieces

Instructions:

Place the three cups of water into a medium sized pot. Peel and dice the potatoes and carrots, and add to the water. Add all remaining ingredients to the pot and stir well.

Making the Soup

Bring to a boil, then turn down to medium/low to simmer, cover, and cook until the vegetables and noodles are tender, approximately 15 minutes. Taste and adjust seasonings, and serve with saltine crackers.
