Not the greatest name, I know (and Shane said they’re not the greatest looking either)…but these things taste like a caramelly, nutty chocolate bar without all the refined sugar and other undesirables.
I made something similar a few years ago, but I couldn’t remember where I saw the recipe, so these are made up from what I think those ones were like….all I could remember is that they had dates, cocoa, and almond butter in them, so I adjusted these until they tasted similar to the ones I made before. I added the hemp hearts for a bit more nutrition.
Et voila!
Chewy Chocolate Almond Balls
makes about 18 balls
15 dates (pitted)
1/2 cup almond butter
1/4 cup hemp hearts (optional)
2 tablespoons cocoa powder
1/4 teaspoon salt (unless your almond butter is salted, then use 1/8 teaspoon)
Blend everything together in a food processor until it becomes a smooth paste. Shape into 3/4″ balls and set on a sheet of waxed paper, then store in a sealed container in the fridge.
